I notice just the one entry for Apocalypse Now. There have been 2 released version up til now with the Redux version being significantly longer then the original. Now we have a "Final Cut" version that is somewhere between. Would separate entries for these alternate versions be appropriate, or should they still all fall under the umbrella of the original release?

Unfortunately, on TMDb, only the original release of a particular film is permitted, and any later expanded, remixed, or however else newly a variation on the original film, is not allowed.
That's caused much discontentment, as there are a number of films that there are multiple different versions of, that each version has significant notable differences that render those movies such that they are unique from the earlier/other releases.
I've seen, on the TMDb Support forum, that something is planned for finally better addressing, or perhaps for allowing alternative versions to be permitted, though so far the policy remains that only the original version of something is allowed to have an overview page on the database.
For now, how to acknowledge alternative releases is to make sure they're added to the original release's Alternative Titles field. Plus you can acknowledge the expanded, re-edited, etc. re-releases in the Release Information field of the editing page for the original release.
